Hello, this time I will share Peanut Butter Sauce Recipe. The recipe is easy and simple, and it is made from scratch! Instead of peanut butter, I use the real and toasted peanuts. The taste is savory, sweet, slightly spicy, and absolutely delicious.
In Indonesia peanut butter sauce or we call it saus kacang or sambal kacang is a complementary dish for enjoying certain foods such as satay, salad, dumplings/wonton wrappers, batagor, ketoprak, and many more. Hani will share one of them in the next recipe post so stay tuned!
First select the best peanuts, then toast it in pan over medium heat. I choose not to fry them with vegetable oil (almost Indonesians fry them) because I think it will be healthier if we toast it. Then sauté cayenne peppers, chili pepper, garlic, and shallots. Once everything is ready, prepare pestle and mortar to mash all those ingredients. Add one medium sized block of brown sugar, boiled potatoes and salt to taste.
When you are looking to find Indonesian peanut butter sauce recipe, in general you will find a candle nut as the thickening and smoothing agent. But I learn from satay seller that they usually use couple tablespoons of mashed potato or boiled potato to thicken and smooth the sauce. Sometimes they substitute it with sweet potato. At the time I made this, Hani made mashed potatoes, so I mix two tablespoons mashed potatoes into peanut butter sauce. However, if you want to try this recipe and dont want to bother making mashed potatoes first, I think you could just use simple boiled potato.

Peanut Butter Sauce
Prep Time: 15 minutes Yield: 1.5 cups
Cook Time: 10 minutes
Total Time: 25 minutes
100 grams peanuts, toasted
2 cloves of garlic
1 to 4 cayenne peppers, to your liking (if you like it spicy)
1/3 red chilli pepper
1 medium sized block of brown sugar (40 grams)
2 tbsp boiled potatoes, mashed
1 tbsp cooking oil for sautéing,
2 cups of water
1 tbsp kecap manis or sweet soy sauce
Salt and pepper, to taste
1. With 1 tbsp cooking oil, sauté shallot, garlic, cayenne pepper, and red chilli pepper over medium heat for 2 minutes.
2. Grind all the ingredients above, salt, pepper, and toasted peanuts with pestle and mortar until smooth.
3. Add brown sugar and boiled potatoes and grind until combined.
4. Add water and stir.
5. In a pan boil peanut butter sauce on low heat for 5 minutes.
6. Set aside and put it on a small bowl.
7. Add a splash of lime juice and kecap manis.
8. Serve with the main dish.
If the sauce is too thick for you, you can add warm water and stir until combined. You can store it in a fridge up to a week. Warm the sauce before serving.
